In the days before large supermarkets, we used pickling as one of the ways we preserved our food for the winter.This is a very simple but delicious pickling spice uses flavors that we are more accustomed to than it's cousin the Old World Pickling Spice. It is made using: coriander, mustard, peppercorns, bay, fennel seed, allspice, and chili powder.
